I surprised myself that I came all the way to Georgia, made chicken pho, and was able to take a few pictures for a cookbook I’m doing for my mom. I make this all the time, but for some reason, it’s been the hardest dish for me to capture with my camera; I’m not sure why. This one was very basic because I’m not at home so I don’t have the usual fish sauce, hoisin sauce, or Siracha…but maybe that’s the magic because it was so delicious. My mom was the master at making scrumptious meals with just a few ingredients. I miss her so much. Can’t wait for the cookbook in her honor to be a reality.
